A Tasty Way to Eat Squash- For Real

This is not squash soup because I ate all the squash soup.
Breakfast today was an orange, but I really, really wanted it to be Halloween candy.  

Last night was squash soup and asparagus.  It was really good.  I wasn't expecting it to be so good.  So good, that by dinner time there was not enough soup.  Nobody in the family really wanted to try it anyway, so I ...
poured what was left over a bowl of bow-tie pasta.  Kids will eat anything over bow-tie pasta.

My mother brought the soup with her when she came for Halloween, so I don't have the recipe but here are the clues:  
  • She gave it to me because she put cloves in it and she hates cloves.
  • I didn't taste any cloves.
  • It was yellow.
I topped it with shredded mozzarella.  Yes, I am aware that real mozzarella, still floating in brine is too soft to shred, but boy!  Did that store-shredded mozzarella work on the squash soup. 

Here's the thing: I don't like squash and I'm not crazy about cheese.  So, when I tell you it was good, it was.

  1. Sounds very tasty, visually not the most dynamic looking dish, but as my Momma always said "it all looks the same in your stomach".

    1. That's why I didn't think the kids would eat it, but today they asked for it! It did look like that picture, but yellow.
