Pumpkin Bread, Pumpkin Muffins, Pumpkin Cookies!

HERE IT IS!  The be-all and end-all recipe for pumpkin.  The only pumpkin recipe you will ever need to make pumpkin bread, pumpkin muffins or pumpkin cookies!  

Yesterday I made it and used the same batch of batter for both the cookies and the loaf.  I told the kids if they emptied the dishwasher I would make more today, but they didn't.  My husband asked them to all day.  After I went to bed I heard him emptying the dishwasher.

This recipe started as a cookie recipe, but a very soft, cake-like cookie (see picture.)  The softness is what triggered the idea to make it into pumpkin muffins and pumpkin cake.  I was surprised how dense the muffins and cake were.  Add a couple extra eggs of you want a fluffier loaf...


Pumpkin Cookies/Cake/Muffins
1/2 cup butter
1 1/2 cups sugar, white and brown
1 cup cooked pumpkin
1 tsp or tbsp vanilla
1-2 eggs (2-3 for fluffier cake)
Mix all that together

Mix this stuff together in a measuring cup and add it:
2 1/2 cups flour
1 tsp baking soda
1 tsp baking powder
2 tsp ground cinnamon
1 tsp pumpkin pie spice

Bake at 350 until the cookies have brown edges. (12 minutes in my oven which cooks fast.)
Or the muffins or cake are dark brown and a toothpick comes out clean (cake took half an hour in my oven.)
